Roasted Chicken
This classic roasted chicken is great on its own and in countless other recipes. This recipe calls for two chickens so that you have leftovers! Its the Best most moist chicken I’ve ever had… I couldnt stop eating it the second it came out of the oven


Ingredients:
* 2 chickens , 4 1/2 to 5 pounds each
* 6 lemons
* A poultry mix of fresh herbs: Rosemary, sage, thyme, parsley and oregano work well

Marinade for one chicken:
* 1 cup Dijon mustard

* 1/2 cup soy sauce

* 1/2 cup juice from fresh lemon (don’t discard lemon rinds)

To make marinade:
Place all ingredients in a nonreactive bowl. Whisk with a wire whisk until ingredients are incorporated well—the marinade should have a smooth and creamy consistency.

To make roasted chicken: Preheat oven to 425°. Clean chickens well and pat dry. Place each chicken in its own baking dish. Stuff cavities with lemon rinds and fresh herbs. A poultry mix is fine, usually consisting of rosemary, sage, thyme, parsley and oregano. Pour marinade over chicken. Add cracked pepper and remaining herbs to the top of each chicken.

Place an oven thermometer in each chicken and cover with aluminum foil. Place on the lower rack of the oven. Bake for 1 1/2 hours, then remove the aluminum foil. Baste with a basting bulb. Keep basting often, ever 15 minutes until the thermometer reads 180°.

Play and Freeze Ice Cream Maker

With the unique Play and Freeze Ice Cream Maker, you can make ice cream while on camping trips, at picnics, barbecues, and many other places. You don’t need electricity to make great tasting ice cream, but rather just add ice and rock salt in one end and ice cream mix in the other end. Then, have a ball as you shake it, pass it, or roll it around for 10 to 15 minutes. The ice cream mix can be as simple as cream, sugar, and vanilla or you can try a more adventurous flavor from the included recipe list or make up your own concoction. Made of durable polycarbonate, the Ice Cream Ball is lightweight, portable, and easy to clean.

How it Works:

  1. Fill the ice end with as much ice as possible, then add 1/2 cup of rock salt to the pint size or 3/4 cup to the Mega size. The lid should be hand tightened–do not use the wrench.
  2. Mix up your ice cream ingredients in a container, then pour the mix into the end with the metal cylinder, leaving about one inch for expansion at the top. Hand tighten the lid.
  3. Have a ball! Shake, roll, and pass it around as you mix and freeze the ingredients. It’s not necessary to shake the ball…just motion will do it.
  4. After about 10 minutes for the pint size and 15 minutes for the Mega ball, open the ice cream end using the included plastic wrench. Scrape the sides of the cylinder to mix up the ice cream using a plastic or wooden spoon (don’t use a metal spoon as it will scratch the cylinder). Then check the ice end. Pour out the excess water and add more ice and up to 1/3 cup more rock salt to enhance the freezing ability. Close the lids securely and continue having a ball for approximately 5 to 10 more minutes (15 for the Mega).
  5. You will then have about a pint (or quart for the Mega ball) of delicious soft-serve ice cream. The consistency will vary based on the ice, your mix, the outside temperature, shaking frequency, etc. Once the ice cream is to the consistency of your liking, gently scoop it out and enjoy!

Important tips for using your Play & Freeze Ice Cream Maker:

  • Directions and recipes are inside the Ball.
  • Use cream instead of half and half for richer tasting ice cream.
  • Leave about an inch of space for expansion when you fill up the can with the ice cream mix.
  • After 10 minutes (15 for Mega ball) of mixing (shaking, rolling, and passing), it is important to stir the ice cream mix (it freezes more around the can). Also, drain the water and refill with ice and additional rock salt. Have fun for another 10 to 15 minutes and you’re done.
  • Use the provided plastic wrench to open the ball, but not to close it.

Instant Pizza Dough
This is the quickest way to make pizza dough, Since it has only a 10 minute rising

Ingredients

3 1/2 Cups of All Purpose Flour
1 Tablespoon Sugar
1 Tablespoon ( 1 Packet ) Instant Rise Yeast
1 Teaspoon Salt
1 Cup Water
1 1/2 Tablespoons Extra Virgin Olive Oil

Directions –

1. In a large bowl, combine 2 cups of flour with sugar, undissolved yeast and salt. Heat olive oil and water together until very warm. Slowly stit in flour. Mix well.
2. Stir in 1 1/2 cups of remaining flour, enough to make a stiff dough. Knead on a lightly floured work surface until smooth and elastic, about 8 to 10 minutes.
3. Preheat oven to 450 Degrees
4. Place in Oiled Bowl and cover with a clean tea towel. Let rest for 10 Minutes
5. After resting divide dough in half. Roll or stretch each half to 12 inch pizzas. Or use single roll for 14 inch pizza
6. Place in light oiled pizza pan. Cover and let rest for 10 more minutes before putting on toppings of your choice.

Pizza Sauce

Makes Enough for 2 Pizzas

Ingredients

2 tablespoons olive oil
1 whole Italian peeled plum tomatoes, (two-pounds)
3/4 teaspoon dried oregano

1 1/2 teaspoons salt
1/8 teaspoon freshly ground black pepper

Directions

  1. Pour olive oil into a large skillet, and place over medium heat. Using your hands, squeeze tomatoes to crush them. Add to the warm olive oil, along with the remaining ingredients. Cook over medium-low heat, breaking up tomatoes with a wooden spoon, until the sauce is thick, 40 to 50 minutes.
  2. Pass sauce through a food mill, discard the seeds, and let cool
